Skewers by the pieces

Suya street food originated from the Hausa, Tuareg, and Fulani Berber tribes, which brought it to the streets of the central city in small stands by shepherds from North to Central Africa. 

Traditionally, it would be grilled slices of thin-cut lean or fat pieces of beef or lamb, and the red SUYA powder would be on the side to dip with some slices of raw red onions, tomato, and peppers.

The chef's twist is creating skewers with her favorite protein, house-marinated, and topping them with a mild, heavy peanut & spice mix powder.

It’s a version of “meat on a stick.” Great to walk around with.

Fatayas

In most countries, there is a version of a hand pie, empanadas, patties, turnovers, etc.

These party favorites are filled with tasty and juicy fillings and great to walk around with

Vegetable Ndambé aka Red Red

It’s a rendition of Senegalese street food stew of  Black-eyes peas in red sauce & palm cream is usually served with bread. You can find a similar dish in Ghana, like Red Red, all the way down to Togo and Cameroon

Gar’ba Salad

It’s a fun version of the Garba dish from the Ivory Coast, served with fried fish, Sauce Chien pickled salsa, and Attieke cassava couscous. Here, It became a Salad by adding mixed greens and a creamy Ginger Coconut dressing on the side.

Gnawa Salad

A salad inspired by the Oasis of Mauritania in the Sahara Desert. 

Roasted eggplant, greens, cabbage, Carrots, chickpeas, boiled eggs, and smoked black cumin dressing

Mafé aka Groundnut stew

The Senegalese version of a peanut butter stew served with white broken rice

Called groundnut stew in the west coast of Africa, it's a staple soup or thick stew that can be cooked with vegetables like Okra, beans, or meat.

It incorporates groundnut paste in a light broth and is slowly simmered.

  • Lamb chunk

Yassa

Slowly braised caramelized onion, limes, olives, mustard and ginger.

A Senegalese dish where the meat is preferably grilled and added to the onion stew to simmer. Served with White broken rice or Couscous.

Originally from Nigeria, this stew includes crawfish, Palm oil and spices. Egusi is a seed of a pumpkin/gourd powdered incorporate in the sauce

Thieboudieun

The traditional UNESCO recognized dish including 

Braised Cabbage, Carrots, Eggplants, Yucca, and tamarin and broken rice cooked in The original Jollof sauce

Saka Saka

Originally from the region of Togo and Liberia Saka is a stew based on cassava leaves and green vegetables slowly simmer. With the addition of smoked seafood or smoked meat and palm oil.

A smoky meat dish grilled with warm and woody spices like pimento seeds & cloves

Served with Ghana style Wakkye rice cooked with sorghum bark, field peas and buttery cabbage .
